Very reliable baking book. If something comes out badly, it's your fault. No show stopping baked goods exist here, though. But that's the case with all things released by professional test kitchens.. They end up with the recipe that the MAJORITY didn't mind, so no extreme, blow-your-mind deliciousness will be found. It's mostly simple and classic American baked goods, but wonderful.

This book is excellent. Very thorough. I enjoy the other cookbooks from Cook's Illustrated and also their magazines. I've tried a couple of recipes and I appreciate all the helpful hints and suggestions on products to use. Am considering purchasing this as I've only checked it out from the library.
