As I start this review of Randi’s Country Kitchen Cookbook, my house smells heavenly. I made the Red Wine Braised Short Ribs for supper tonight. I followed the recipe exact except I left my veggies chunky, and I doubled the recipe. Oh my, the flavor was incredible and the meat was so tender it fell off the bones. It literally put a smile on my face.

The cookbook starts with a personal thank you and a brief biography of the author. Next is the table of contents that includes sections on Appetizers and Snacks, Soup and Salad, Entrees: Chicken, Entrees: Seafood, Entrees: Beef, Entrees: Pork, Entrees: Lamb and Turkey, Entrees: Pasta Dishes, Entrees: Meatless Dishes, and Desserts. I was impressed that she had a section on lamb and turkey, as you don’t see that too often in cookbooks; at least I don’t.

Each recipe includes a brief history of how the recipe came to be. Some of my favorite recipes include Game Day Beef, Kale, Mozzarella Stromboli, Grilled Shrimp Salad with Louie Dressing, Coq Au Vin (French Style Red Wine Braised Chicken), Smokey Oven Roasted Pulled Pork, Stuffed Shells With Fire Roasted Tomato Sauce, and Eggplant Lasagna, and of course, the recipe I already made from the book, Red Wine Braised Short Ribs.

My one complaint about this cookbook, is other than a picture at the beginning of the chapter, there are no pictures of what the recipe looks like once cooked. I’m a very visual person when it comes to cooking so more pictures would have been nice.

Not every recipe was to my taste, but I liked the simplicity of the recipes. The author’s instructions were clear and easy to understand. I would purchase this cookbook and to those of you who have KindleUnlimited, it’s currently available.

I read this cookbook as an early reviewer. While the recipes are time consuming, they are delicious and authentic.
I live in a world where Google is open and my cookbook shelf is getting smaller and smaller. I am glad to have this title in a Kindle edition so that is may live between two worlds. Really good food, if you have the time and interest to prep ingredients. I used to cook recipes like this and buy fresh ingredients. At this time in my life, I no longer have the energy. I appreciate the color photographs included. Well made cookbook, I recommend it.… (mehr)
