Evelyn Saint-Ange was the maiden name and literary pseudonym of Marie Ébrard, a professional chef. Her cookbook La Bonne Cuisine de Madame E. Saint-Ange (1927), on traditional French home cooking, was France's equivalent of the USA's "Joy of Cooking" for many years.
It was based on columns she wrote for her husband's periodical, Le Pot-au-Feu, and provided not only recipes but details on cookware, appliances, and kitchen tools of the period. The book served as inspiration for Julia Child and many other cookbook authors. It was translated into English in 2005.
