One I recently found hilarious is from Mo Willems's Goldilocks and the Three Dinosaurs.

It is bigger, but this is the only image I found online.

Dan Santat's "The Adventures of Beekle: The Unimaginary Friend" has great endpapers too! In them, he creates friends for all the monsters who are in the background spreads of his book. I love it when endpapers give an extra depth to the story ;)

The endpaper art of Spring Comes to the DMZ sends a subtle message. It's a map of the world, without country outlines, except that Korea is a slightly different color. On the front set, there is a red line crossing the country. On the back set, the red line is gone.

I recommend the book.
