I've been collecting some clever clues and here are a few:
Gegs (9, 4) - scrambled eggs

A sailor, a saint, a plan - it's hard to solve (8) -
abstruse

Open and shut in the case of detectives(6)
candid

Would love to see other people's favourites

I'm in the pedantic camp that doesn't see "Gegs" as a cryptic clue – where's the definition? – but I like your other ones. Here are some of my favourites:

Die of cold (3,4)

Bust down reason? (9)

Some job at hand? We'll soon see (4,3,5)

The first is legendary; I've no idea where it's from. The second is from Les May in an Azed competition, and the third is from Brian Greer (aka Virgilius). The answers, written backwards to avoid spoilers, are: ebuceci, hsawniarb, sllewdnahtab.

I think gegs has been in a number of crosswords in a number of publications. Not sure who did it first.

How about

Writer had to join crowd to see American building (8)

Thanks to Brunellus and Andyl. The"Bath and Wells" clue had me foxed until I thought of the Bishop and realised that "see" was the indicator. Another couple I liked:

Field where converts adore the Catholic Church. (9) Also following Brunellus:
emordorea

Vile Gibson quit musical (6):
suoido
