While a turkey is not a chicken (as far as we know), who's keeping score that closely? As a result I have included numerous turkey dishes among the recipes. In addition there also a few seafood recipes just to add a bit of diversity.Where a recipe calls for ground turkey, ground chicken may be substituted, if available. Real bacon can be substituted for the turkey "bacon" where it is used. But that would be defeating the no red-meat concept.Food preparation should be a pleasure and not a chore. Meals are best when they can be enjoyed and shared with friends... and hopefully without the hassles of a messy cleanup.The luxury of cooking at home has three main foes...-- first, of course, is a lack of time-- second is the normal multi-dish cooking with its need to have all dishes ready at the same time-- third is the annoying chore of cleaning several pots, pans or bowlsOne helpful solution to this dilemma might be the "minutes" meal concept seen on TV. Another may be the "almost-homemade" cooking style that uses many off the shelf ingredients to simplify the cooking process. The main disadvantage to both of these methods is that neither of them does much to address the time that is required for cleanup. A reduction in cooking time matters little if there is still a substantial dish cleanup routine to go through once the preparation and service is finished. This book's secondary premise is that there are a wide variety of meals that can be prepared (usually) in a single pot or pan in order to mitigate the cleanup routine.In some cases I have broadened the targeted one-pot regimen a bit. In a few recipes there are instances where an additional bowl, pot, or pan is required, in addition to a serving dish. I don't consider this to be much of an adulteration of the "easy" concept since the cleanup is still simple.Some of these included recipes have been handed down from my mother's great playbook. Another few of them have been graciously donated by friends. Others may have simply evolved from my being lazy. Those recipes were modified to make them simpler and easier. It is my propensity for not wanting to spend any more time on a project than is necessary that is demonstrated in this cookbook.… (mehr)
