So you've taken the first step in purchasing a vegetarian cookbook? Good for you! You are unlike the millions who have thoughts about starting a vegan diet, but ends up falling through the cracks.Following a vegetarian diet can be extremely fulfilling and rewarding, since many nutritionists have touted the benefits of the vegan diet over and over again. Yet, very few switch. Why? Well, honestly it is difficult to just pick up a vegan cookbook and just start enjoying recipes when you've been a meat eater all your live.That's where this book comes in- I have ensured that you will not become saturated merely with let's call it "salt based" meals (which I have included in the book as Savory Recipes), but also have ample variety at sweet options as well. I think that's what throws many people in a loop- going to a vegan diet does not mean you need to eat cabbages for breakfast, lunch and dinner.Thinking about this vegetarian cookbook seriously now eh? Well, how about these for starters* Vegetable Omelets (yes, my vegan cookbook allows use of eggs)* Roasted Vegetable Soup (the aroma is AMAZING!)* Cheesy Asparagus Casserole* Ratatouille (bet you're intrigued now!)* Blueberry Lemon Bundt Cake* Raisin Baked Apples* And many, many more!As you may had noticed, my recipes do include eggs in many recipes. Now, I understand that not everyone will share my sentiments, but you do need protein still as a vegan, and it's relatively hard to get it unless you do that.
