Ed Baines

Ed Baines trained under Anton Mosimann at The Dorchester, and then on the yacht Wind Spirit, under Eric Toubar and Yves Garnier. He followed this with 18 months in Australia at The Hilton in Cairns, one of the first restaurants in the world to develop Pacific Rim cooking. There he met restaurateur Mogens Tholstrup and so became head chef of Daphne's. Three years later he and business partner James Poulton opened Randall & Aubin in Soho.
