Authoress wrote the historic information for Complete Book of Irish Country Cooking: Traditional and Wholesome Recipes from Ireland by Darina Allen, the founder of the Ballymaloe Cookery School in Shanagarry, County Cork, Ireland. Ms. Sexton was a graduate student at the time. This book is her own work. She has studied the changes in Irish diet that resulted from the Norman-Anglo invasion.
