For both health and ethical reasons, more and more people would like to stop eating meat and are turning to vegetarian diets. For many people contemplating the switch, they often wonder how a vegetarian diet can provide adequate nutrition, especially for growing children, whether a vegetarian diet will satisfy their palates, and what kind of a vegetarian diet would best meet their needs. Should it include eggs? Dairy products? Fish? Erica Smits provides basic answers to those questions in the beginning of VEGETARIAN RECIPES FOR MEAT LOVERS. It discloses ways to substitute vegetarian choices for meat when altering recipes, e.g., using extra black beans to replace beef when making chili or using tofu instead of chicken. This is followed by eleven recipes for soups and snacks, five recipes for pastry and eggs, thirteen featuring grains, ten for pasta, twelve for pulses, and twelve for vegetables. Some of the recipes do call for eggs, others for dairy products, and many for neither. It includes ethnic recipes, e.g., salsa, spring rolls, sushi, polenta, linguine, chick pea and eggplant, curried eggs in pappadum nests.
While the book does basic information and a variety of recipes, the author includes a disclaimer that the recipes may not be suitable for everyone and neither she nor the publisher assumes responsibility for errors or omissions and that she may not be held responsible for any loss or damage resulting from the information in the book. (She does ask for people finding errors to let her know.)
Cookbooks are usually well-tested and proofread before being published. While the information is interesting and some of the recipes are tempting, the disclaimer makes me reluctant to try them if I am not very familiar with the ingredients and instructions. That’s a shame. I have lowered my rating because of that.

Delicious Smoothie & Healthy Snack Recipes
Many health benefits are discussed at the beginning of the book as to why we should be drinking smoothies with fresh fruit and vegetables.
Choices as to what blender and what each offers in the way of features is talked about. There are also troubleshooting things if your drink isn't just quite right.
Many pictures and nutritional information for the recipes. Love the section for energy bars that you make yourself.

20 Minute Express Recipes for Busy People by Ericka Smits
Love the tips at the very beginning on how to get out of the kitchen preparing quick nutritious meals.
Each chapter/category also has the listings of recipes so you can glance through and find one with the ingredients you have on hand.
Love this book because it also lists the nutrition labels!!!!
French toast wins out for us also as it's 0 cholesterol.
Grilled cauliflower sounds enticing enough to try also as we try to eat healthier.
Pictures of the dishes made are a nice touch.

5 Ingredients One Pot Meals: Easy Slow Cooker Recipes for Busy Women by Ericka Smits
Love how each category at the very beginning of the chapter will show the recipe name-easy to find what you want to make in a hurry.
None of the recipes jumped out at me but they do look easy to get together the ingredients for the day baking.
Out of this collection of recipes I want to try the spicy autumy apple cake.
