Some really great recipes. There are not a lot of pictures but the recipes are easy to follow!

OK, I didn't exactly 'read' this - as it's a cookbook, I basically scoured it for ideas, recipes, and solutions. Still, it's such a massive tome (900 pages), that I had to renew it from the library to allow myself time to really spend quality time with it.

They cover the waterfront with this one - every conceivable dish and method. My only complaint, and it is an admittedly petty one - is that I like cookbooks with pictures. When it comes to cooking, I kinda like to see what it might look like when I'm done - or what it should've looked like, rather.

Still, lots of good info here. The book is vegetarian, not vegan, so items like cheese and eggs recur throughout the book. Not a problem for me, because asking me to go without cheese is like asking Amy Winehouse to forgo the bourbon.

This is my new bible. I usually don't buy books but this one is so immense and helpful that I must have it at all times. There's a whole section on grilling fruit!

This is one of my go-to cookbooks. I can always find something delicious. Bittman is great on flavor and offering variations. This book empowers home chefs to experiment by teaching how flavors work together.

One caveat: recipes often rely on other recipes. So, read the recipes and directions carefully. More than once I've thought I had a quick meal in front of me only to realize that it required incorporating a longer recipe from elsewhere in the book.

The title says it all, teaches technique and ideas more than recipes, excellent reference for vegetarian cooking.

Loved, loved, LOVED this cookbook! Immediately added it to my must-buy list. From the way its organized to the how-to instructions to the recipes themselves -- everything you could want to make vegetarian food is in there.

This book has been a savior so many times: How do I cook heirloom beans? What can I make with groats? How long do dried beans take to cook?

It's all in this book. No, I don't even use a quarter of the information in the book, but when I need something, I can depend on Bittman having covered it in this tome.

Best vegetarian cookbook of all time. The most useful part is the part about how to cook - what different techniques mean and how to do them. If I'm trying a new technique or want to figure out how to cook a new food, I often return to this book as my starting point. The recipes are pretty good, especially for provoking ideas about what to cook when I'm getting bored with the same old beans-rice-tofu type foods, but I almost always alter them. That's fine though - in fact it seems to be exactly what Bittman would want you to do, since he gives you the tools to cook intuitively.

How to Cook Everything Vegetarian is, hands down, one of my favorite cookbooks. The book itself is large, stuffed full of delicious and easy to follow recipes. It did not, however, achieve its size by being packed full of glossy pictures. There are drawn illustrations, but they never feel thrown in. Every time an illustration pops up it is useful and informative. With recipes ranging from fruits, to breads, to pastas, to condiments, this is a cookbook everyone could find useful.

A go-to kitchen bible for vegetarians, or anyone trying to change it up with more meatless meals. Bittman's recipes are easy to follow, and he provides creative ideas for substitutions and menu pairings, to help keep variety on the table.

Borrowed this not long after it came out. Loved browsing through the recipes. Loved reading some of the tidbits between the recipes.

I've had this cookbook for just a few days now. One doesn't really read a cookbook of this type and size from cover to cover, but I've looked through it quite a bit and read parts.

Yesterday I made some delicious home-made granola (wow- so easy) and apparently it will keep in the refrigerator in a container indefinitely. This morning I made some waffles and my son and daughter said they liked it better than my old waffle recipe (which they really liked). What I didn't tell them was that instead of one of the cups of flour, I used a combination of half a cup of whole rolled oats (which disappeared into the waffle without leaving a trail) and half finely ground cornmeal. I also used agave nectar instead of sugar (that was my own idea). The whole book seems to geared towards creative options and alternatives and that is the way I cook anyway. The granola had a table where you choose your own options in addition to a number of recipes with different options. This book has really great ideas for that type of cooking which I love. It is also HUGE. So many recipes to try!

Bitman reminds me of Good Food Magazine without all the product placements etc. A guy whose heart is in right place, maybe I've had too much of Good Food Mag uK.

Vegetarian cooking can be flavorful and interesting. Mark Bittman provides readers with a road map to selecting the proper tools, techniques, ingredients, and recipes for making delicious vegetarian dishes.

When my doctor suggested I eat more vegetarian meals to improve my health I picked this up from the library. I must say it is one of the most comprehensive cookbooks I have found to date. I was pleased to find that most of the recipes were easily made from locally available ingredients. I didnt have to run to the corners of the earth to find special spices/vegetables/tools in order to cook any of the recipes I have tried. I plan to purchase this book once I have run out of renews at the library!

Now if only I could convince my boyfriend to eat this stuff...

Absolutely fantastic cookbook. The best thing about it is that each recipe comes with a bunch of variations, and a bunch of ideas for more variations, so you could cook from this book for your whole life and never eat the same thing twice. The recipes are clearly written and easy to understand.

My only complaint is that the book is a little overwhelming. When I don't know what I want for dinner, flipping through this doesn't help me get ideas, it just frightens me with too many options. But for those times when I have some spinach that needs to get used up and I'm looking for a spinach recipe, this book is absolutely amazing.

Great cook book for the beginner or the well-versed cook. Lots of deceptively easy recipes that pack plenty of flavor. I use it to locate recipes for those veggies I pick up fresh at the farmer's market.
