La cuisine et la patisserie Francaises von Alfred Guérot
I was really surprised not to find this in a public library as this is the book Baul Bocuse COPIED for his La cuisine du Marché. He literally copied most of the recepies straight from this book. This happens a lot of course, but that doesn't mean you have to approve. For future historians of cooking this is going to be interesting. And you can actually cook from it too. Has many lovely drawings.
