Cookbooks probably are very numberous in Jewish family book collections. I want to call attention to one that I just added, Community Passover Cookbook,with recipes contributed with such celebrities as Phyllis DillerMindy Sterling, Shelly Morrison of Will and Grace, Jack Klubman, and Lainie Kazan, and Golda Meir's Passover Chicken Soup. Hi Squeaky! Nice to see you in another place. I don't have a favorite Jewish cookbook. I have several that I inherited from my deceased mother-in-law, but they are so old, I can't use them. The recipies in them still use shmaltz and other unhealthy ingredients that we tend to stay away from these days.
I probably use the The Complete American Jewish Cookbook by Anne London from my collection the most (I have several that I have yet to catalogue here).
Most of my recipies are written on a piece of paper from my mother, aunts, cousins and friends' mothers. I have a make-your-own recipie book with album-like pages where you insert index cards. It's practically bursting at the seams.
I will check out the Passover cookbook edenrob recommends. I'd love to hear other people's recommendations.

A few months ago I purchased Olive Trees and Honey by Gil Marks. It's a vegetarian cookbook gathering traditional recipes (rather than recipes adapted to be vegetarian) from around the world. So far, everything I've made from it has been absolutely marvelous. It's attractive, informative, and one of my favorite cookbooks.

Joan Nathan's Jewish Holiday Cookbook and Claudia Roden's The book of Jewish food : an odyssey from Samarkand to New York are still "go-to" books for me.

Faye Levy has now published a series of cookbooks, mostly but not exclusively Jewish-themed. Many of her recipes are assertively spiced, reflecting Yemeni and Israeli influence. These have become among my favorites. Give them a try.
