Joe Schwarcz does a good job of describing a lot of complicated food studies & names in everyday language anyone could understand. The topic does lend itself to a lot of difficult to read &/or pronounce words, making it sometimes difficult to take in the content, yet I learned a lot about food safety, additives, and myths.
